The Night of Echoes

The Night of Echoes is Castaria’s most solemn observance — an evening when Lethari enclaves and Castarian noble houses gather to honour shared ancestry and mourn lost homelands. This soup is served as the meal’s centrepiece, its ingredients chosen for symbolic meaning rather than mere flavour. The white beans represent resilience — they can be stored for years and still sprout life when planted. The greens represent renewal. The broth, clear and pure, represents the clarity of memory.

The soup is served in complete silence. Each person reflects on ancestors they never knew but whose choices shaped their existence. Lethari families who came to Castaria generations ago still observe this night with the same weight as those who arrived within living memory. Only after the soup is finished does conversation resume — and when it does, it tends to be honest in ways that other evenings are not.

Leftover soup is never kept by the family who made it — it is given to travelers or those in need. This practice honours the spirit of generosity that helped Lethari refugees survive when they first came to Castaria.

Night of Echoes Remembrance Soup

Ingredients

  • 1 lb dried white beans (cannellini or great northern)
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups vegetable or chicken stock (homemade preferred)
  • 2 bay leaves
  • 1 sprig fresh rosemary
  • 4 sprigs fresh thyme
  • 4 cups kale or chard, stems removed, leaves chopped
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • High-quality olive oil, for serving
  • Fresh parsley, chopped, for serving
  • Crusty bread, for serving

Instructions

  1. The night before: sort through beans, discarding any stones or damaged beans. This sorting is done mindfully, as a meditation. Rinse beans and cover with water by 3 inches. Soak overnight.
  2. The day of serving: drain and rinse beans.
  3. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook gently until softened, about 10 minutes. The vegetables should not brown — this soup values subtlety over caramelization.
  4. Add garlic and cook 1 minute until fragrant.
  5. Add drained beans, stock, bay leaves, rosemary, and thyme. Bring to a boil.
  6. Reduce heat to low and simmer, partially covered, for 1 to 1½ hours until beans are completely tender. Skim any foam that rises to the surface.
  7. Remove and discard bay leaves and herb sprigs.
  8. Add chopped greens and simmer 5 more minutes until wilted and tender.
  9. Stir in lemon juice. Season with salt and pepper. The soup should taste clean and pure — not aggressively seasoned.
  10. Ladle into wide, shallow bowls. Drizzle each serving with excellent olive oil and garnish with a small amount of fresh parsley.
  11. Serve with crusty bread on the side, but never in the soup itself.

Variations

Hearty Winter Version: Add diced potatoes along with the beans for a more substantial soup.

Herb Variation: Use fresh sage instead of rosemary for a slightly different aromatic profile.

Lemon Zest: Some families add lemon zest to the garnish for additional brightness — a small departure considered acceptable even on the Night of Echoes.

The Night of Echoes welcomes any who feel displaced or are seeking connection to heritage. The soup is always made in quantities large enough to serve unexpected guests — turning someone away on this night is considered a profound breach of the values it is meant to honour. The silence at the table is not emptiness. It is the sound of people choosing to sit with something difficult together, which is its own form of belonging.
