The Guild Table
The merchant guilds that control Etrium’s economy meet weekly to set prices, resolve disputes, and coordinate trade routes. These flatbreads are always present — warm, fragrant, topped with a spice blend of sesame, thyme, sumac, cumin, and oregano, brushed generously with olive oil. The bread serves a practical function: you cannot shake hands if both parties are holding bread, forcing a moment of sitting and eating before business begins. This pause is not incidental. It is the point.
The spice blend is deliberately complex — no single ingredient dominates. This represents the guild philosophy: many merchants, many specialties, all contributing equally to Etrium’s success. The recipe is openly shared rather than guarded, demonstrating that prosperity through cooperation reliably beats secrecy through competition. This is not idealism — it is what Etrium’s trade ledgers have confirmed across centuries of empirical testing.
Guild protocol requires that the most junior member of the meeting bake and serve the bread — a duty that rotates but ensures everyone remembers starting at the bottom and the importance of service. The flatbreads are torn by hand, never cut with a knife. Sharing a torn piece is considered more personal and binding than slicing clean portions.

Ingredients
Dough:
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet (2¼ tsp) instant yeast
- 2 tablespoons olive oil
- 1 cup warm water
Spice Topping:
- 2 tablespoons sesame seeds, toasted
- 1 tablespoon dried thyme
- 1 tablespoon ground sumac (or lemon zest if unavailable)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup olive oil for brushing
Instructions
- Combine flour, salt, sugar, and yeast in a large bowl.
- Add olive oil and warm water. Mix until a shaggy dough forms.
- Knead on a lightly floured surface for 8–10 minutes until smooth and elastic. The dough should be soft and slightly tacky but not sticky.
- Place in an oiled bowl, cover, and let rise in a warm spot for 1 hour until doubled.
- While dough rises, make the spice blend: combine sesame seeds, thyme, sumac, cumin, oregano, salt, and pepper. Mix well.
- Preheat oven to 475°F (245°C). If you have a baking stone, place it in the oven to heat.
- Divide dough into 8 equal pieces. Roll each into a thin circle or oval, about ¼-inch thick.
- Brush each flatbread generously with olive oil.
- Sprinkle spice mixture evenly over the oiled surface, pressing gently so it adheres.
- Working in batches, place flatbreads on the hot baking stone or on a baking sheet. Bake 8–10 minutes until puffed and golden with charred spots.
- Remove from oven and brush with additional olive oil while still hot.
- Serve immediately, warm and fragrant. Tear by hand — never cut.
Variations
With Cheese: Sprinkle crumbled feta or fresh mozzarella over the spiced surface before baking — a version that crosses from guild meeting into casual tavern menu.
Garlic Oil: Add 2 cloves minced garlic to the olive oil before brushing for a more assertive base.
Whole Wheat: Substitute 1 cup whole wheat flour for 1 cup all-purpose for a nuttier, slightly denser flatbread preferred by the Dvarin shipwrights’ guild.
Kurillian Notes
The oil bowl is placed equidistant between negotiating parties — forcing both to reach toward the centre. This is a subtle physical metaphor for compromise that Etrium’s Diplomatic Houses have included in meeting protocol for long enough that most participants no longer consciously notice it. The ones who do notice it tend to become very good negotiators.
